Kiwifruit and Steak Salad
- 1 SunGold kiwi fruit
- 1 tbsp olive oil
- 2 tbsp apple juice concentrate
- 1 tsp orange juice
- salt and pepper to taste
- 1 SunGold kiwi fruit, peeled and thinly sliced
- 1/2 lb. cooked thin sliced steak of choice (top round, flank, flat iron)
- 2 cups mixed greens
- 2 radishes, thinly sliced
- 1/2 cup chopped tomatoes
- 1/2 cup Mandarin oranges
Puree Sungold kiwi fruit, oil, juices together in a blender. Add salt and pepper to taste.
Arrange greens, kiwi fruit, steak, radishes, oranges, and tomatoes on two plates. Drizzle dressing over salad and serve.
