Chilled Kiwi Cucumber Soup
- 4 SunGold kiwi fruit, peeled and scooped
- 2 Green kiwi fruit, peeled and scooped
- 1 large cucumber, chopped
- 3 garlic cloves, peeled
- 1 large lemon, squeezed
- 3 tbsp olive oil
- 2 tsp tajin seasoning
- salt and pepper to taste
In a blender, combine kiwi fruit, cucumber, garlic, and 1 tsp tajin seasoning. Pour olive oil slowly and puree everything together. Season with salt, pepper, and more tajin seasoning as needed. Allow it to chill in the refrigerator for at least 30 minutes before serving.
