Golden Peanut Sauce and Pasta Bowl


For Peanut Sauce:

  • 2 SunGold kiwi fruit
  • 1 clove garlic, roughly chopped
  • ½ cup creamy, unsalted peanut butter
  • 1 tbsp rice wine vinegar
  • 1 tbsp red wine vinegar
  • 1 tsp sesame oil
  • ¼ tsp low sodium soy sauce
  • ¼ tsp red pepper flakes, optional

To Serve:

  • ½ cup cooked whole grain pasta, such as spaghetti or linguini
  • ⅓ cup shredded red cabbage
  • ¼ cup shredded carrots
  • 1 scallion, chopped


For Peanut Sauce:
Add all the ingredients to a small food processor. Blend until smooth, scraping down the sides as needed. If desired, season with red pepper flakes.

To Serve:
Layer the pasta, red cabbage, and carrots in a bowl. Mix in peanut sauce, top with chopped scallions to taste.
