SUMMER WILD GREENS
WITH KIWIFRUIT CHAMPAGNE VINAIGRETTE


INGREDIENTS:

For Kiwifruit Champagne Vinaigrette
2 ZESPRI® GREEN Kiwifruit
2/3 cup olive oil
1/4 cup Champagne vinegar
1/4 cup orange juice
1 tbsp fresh cilantro, chopped
1 tsp sugar
1/2 tsp salt
1/4 tsp black pepper, ground

METHOD:

  1. Slice kiwifruit into halves and spoon out chunks into a small food processor.
  2. Add all remaining ingredients, and process until blended. Makes 1 1/2 cups.

INGREDIENTS:
For Green Salad

8 oz Fresh salad greens, washed and torn
1 cup Sweet yellow bell pepper, seeded and diced
3 ZESPRI® GREEN Kiwifruit, peeled and cubed

METHOD:

  1. Place salad greens and yellow pepper in large bowl.
  2. Add 1/2 cup Kiwifruit Champagne Vinaigrette and toss until mixed.
  3. Arrange kiwifruit on top of salad. Serve immediately.

Makes: 8, 1-cup servings
