SUMMER WILD GREENS
WITH KIWI CHAMPAGNE VINAIGRETTE

INGREDIENTS:

For Kiwi Champagne Vinaigrette
2 ZESPRI™ GREEN Kiwifruit
2/3 cup Olive oil
1/4 cup Champagne vinegar
1/4 cup Orange juice
1 Tbsp Fresh cilantro, chopped
1 tsp Sugar
1/2 tsp Salt
1/4 tsp Black pepper, ground

Slice kiwifruit into halves and spoon out chunks into a small food processor. Add all remaining ingredients, and process until blended. Makes 1 1/2 cups.

For Green Salad
8 oz Fresh salad greens, washed and torn
1 cup Sweet yellow bell pepper, seeded and diced
3 ZESPRI™ GREEN Kiwifruit, peeled and cubed

Place salad greens and yellow pepper in large bowl. Add 1/2 cup Kiwi Champagne Vinaigrette and toss until mixed. Arrange kiwifruit on top of salad. Serve immediately.

Serves 8, 1-cup servings
