Recipe
by Chef Jet Tila using ZESPRI™ Kiwifruit
INGREDIENTS:
2 pound
best quality Ahi or yellowtail tuna, cut into 1/2 inch cubes
1 cup nori chiffonade
1/2 cup sweet Maui or Vidalia-style onion, finely diced
1 ZESPRI™ Green Kiwifruit, peeled, cut in quarters lengthwise
and sliced thin
1 ZESPRI™ Gold Kiwifruit, peeled, cut in quarters lengthwise
and sliced thin
2 scallions, bias fine sliced
1 oz sesame oil
2 oz Japanese soy sauce
¼ Cup toasted sesame seeds
15-20 Wonton Skins
METHOD:
Combine tuna with 1/2 of the nori, the onion,
sesame oil, chili flakes, and soy sauce.
Before serving, fold in the kiwi fruit. Garnish
with remaining nori, scallion, and sesame seeds.
Serve
on Fried Wonton Chips cut in ½, into triangles.
