Recipe
by Chef Jet Tila using ZESPRI™ Kiwifruit
INGREDIENTS:
1 lbs.
Long Beans, , cut into 2 inch bias lengths
4 lbs. medium Green Papaya, peeled, seeded and grated
½ lbs. Carrots, peeled and grated
1 lbs ZESPRI™ Gold Kiwifruit, peeled, halved and sliced
thin
¼ Lbs Sweet 100 Tomatoes, halved
1 cups Roasted Peanuts, chopped
Sauce
Ingredients:
2 tablespoon Dried Shrimp
4 each Garlic cloves, minced
1 tablespoon salt
4 tablespoon dry roasted Peanuts, chopped
2-4 each bird or Serrano chilies, finely chopped
1/4 Cup Palm Sugar or Brown Sugar
¼ cup Lime Juice
¼ Cup Thai Fish Sauce
METHOD:
Using a mortar and pestle; pound together
shrimp, garlic, salt, chilies, ½ peanuts and sugar
to a smooth paste. Add fish sauce, lime juice and ½
tomatoes. Lightly pound sauce mixture to combine. Set aside.
Place
beans in bowl and pour ½ of sauce over. Stir to combine.
Mix in green papaya, kiwis and carrots. Toss in remaining
tomatoes and peanuts. Taste and add remaining sauce as necessary.
Garnish with fresh cilantro. |
