TIKI CHICKEN SKEWERS
WITH GOLD KIWIFRUIT MARINADE
INGREDIENTS:

Chicken Skewers
1 pound Chicken breast, skinless, boneless, cut into bite-sized pieces
1 ZESPRI™ GOLD Kiwifruit, peeled, chopped
2 tablespoons Bottled teriyaki marinade
16 bamboo skewers
1 tablespoon Vegetable oil

METHOD:

  1. Purée kiwifruit and teriyaki marinade in food processor until smooth. Do not crush kiwifruit seeds by over-blending. Place chicken in medium bowl. Pour marinade over chicken and refrigerate for 30 minutes. Soak skewers in water for 10 minutes. While chicken is marinating prepare Dipping Sauce.
  2. Arrange chicken on skewers. Preheat grill to medium-high and brush with oil.
  3. Grill chicken for 5 minutes on each side until cooked through.

INGREDIENTS:

Gold Kiwifruit Sweet and Sour Dipping Sauce
3 ZESPRI™ GOLD Kiwifruit, peeled, chopped
3 tablespoons Sugar
1 tablespoon White vinegar
2 teaspoons Corn starch
1/4 teaspoon Salt

METHOD:

Purée kiwifruit in food processor until smooth; do not crush kiwifruit seeds. Place all ingredients in small sauce pan over medium-high heat. Bring to boil, stirring constantly, for one minute until thickened.

Nutritional Analysis per Serving: Calories 220 (22% Calories from Fat), 27g Protein, 15g Carbohydrate, 2g Fiber, 5g Fat, 1g Sat. Fat, 0g Trans Fat, 65mg Cholesterol, 300mg Sodium
