Kiwi Gin Cooler
- 2 ounces gin
- ¾ ounce elderflower liqueur
- 4 slices of SunGold kiwi fruit
- 4 mint leaves
- ½ ounce fresh squeezed lime juice
- ½ ounce simple syrup
Add mint, kiwi fruit, lime juice, and simple syrup to cocktail shaker. Muddle the ingredients until the kiwi fruit is mashed. Add the gin and elderflower liqueur to the shaker and fill with ice. Cap the shaker and shake vigorously. Pour through a strainer into a Collins glass filled with ice. Top with soda water and stir, garnish with a slice of kiwi fruit.
