Hang Ten Kiwifruit Tacos

INGREDIENTS:

  • 18 Fish sticks, cooked according to package directions
  • 3 Zespri® Green Kiwifruit, peeled and chopped
  • 3 cups Red cabbage, shredded
  • 1 cup Carrots, shredded
  • 1/4 cup Fat-free ranch dressing
  • 2 tablespoons Lime juice
  • 1/8 teaspoon Ground cayenne pepper
  • 6 Whole-wheat tortillas, 8-inch

METHOD:

  1. Mix kiwifruit, cabbage and carrots in medium bowl.
  2. Blend ranch dressing, lime juice and cayenne in small bowl. Pour over kiwifruit mixture; toss lightly until blended. Stuff kiwifruit filling into tortillas; top with 3 fish sticks each.
