Kiwi Lime Marinated Chicken
- 2 limes
- 1 garlic clove
- 1/4 inch ginger (or 1 tsp ginger powder)
- 1 SunGold kiwi fruit
- 1 small bunch cilantro – half cup chopped
- 1/4 tsp salt
- 3/4 cup water
- 1 lb. chicken breast
- 1 tbsp avocado or other oil
Blend all marinade ingredients. Reserve half of marinade and set aside. Add chicken to remaining half of marinade in a large zip lock bag and refrigerate for at least 2 hours and up to 24 hours.
Grill chicken or pan fry. To pan fry: add oil to a large non stick skillet over medium high heat, add chicken and the reserved half of the marinade to the skillet. Cook chicken on each side for 8-10 minutes, covered until reaching an internal temperature of 165F. Garnish with kiwi fruit slices and lime.
