Red Snapper with Kiwi Salsa


For Salsa:

  • 3 SunGold kiwi fruit, diced into ¼ inch pieces
  • 1 cup ¼ inch diced red bell pepper
  • 1 x 15 oz can black beans, drained and rinsed
  • ¼ cup chopped cilantro
  • 2 tsp lime zest
  • ¼ cup fresh lime juice
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • ½ tsp oregano
  • ½ tsp chili powder
  • ¼ tsp salt

For Snapper:

  • 1 lb. red snapper or other mild white fish filets


For Salsa:
In a medium sized bowl, combine kiwi fruit, bell pepper, black beans and cilantro. Set aside.

In a small bowl, combine lime zest and juice, olive oil, garlic and spices. Add 3 tbsp of this mixture to kiwi mixture, reserve the rest for cooking the snapper.

For Snapper:
Preheat broiler to medium. Place fish on a lightly oiled pan and pour remaining liquid mixture over top. Broil for 6-8 minutes, or until fish just flakes with a fork. Serve snapper topped with kiwi salsa.
